I'm back - update and Chocolate Pie

Things have been hectic to say the least.  Let's get everyone updated.  Work was crazy.  I was working long hours and hardly getting paid.  OK - it was more like not getting paid at all.  I had worked so hard and was getting nothing in return.  Time to look for a new job.  Throw in moving on top of that and that's what has been going on with me.  So now I'm all settled in and looking for a job. 

But as a Valentine's Day treat, BP and I went away on a mini vacation to Atlantic City.  It was my first time there (not BP), but it was a great little get away.  Great food, gambling, and time with the most loving and caring man ever.

So after our little mini vacation, I finally got to bake something.  BP had asked for 'my loving hands to make him a chocolate pie',  How could I say no to that?!  It had been a while since I had baked something, and the idea of it sounded great.  Plus this was an easy recipe - and a low carb, low sugar, gluten free recipe.  And I have to admit, this Chocolate Pie  is really tasty for something that's a diet dessert.

Disclaimer: We couldn't find what we needed for the crust so we went with a premade Graham Cracker Crust.  But it was still yummy.  Highly suggest this is you are gluten free or on a diet.  It will curb your sweet tooth cravings.
