Once the dough is made, let it chill for an hour. Then roll it into balls and roll them in the candy sprinkles. Bake them off and once they come out of the oven, place your candy in the center of each cookie. Let cool and then enjoy! Extremely easy and quick cookie.

Chocolate Candy Cookies
makes about 36
2/3 cup butter, room temperature
1/3 cup sugar
1/4 cup cocoa powder
1/4 tsp baking soda
1/8 tsp salt
1 egg
1 tsp vanilla extract
1 1/4 cups all purpose flour
3/4 cup multicolor sprinkles
Hershey Kisses or chocolate candy of choice
- In a large mixing bowl beat butter with an electric mixer on medium-high speed for 30 seconds. Add sugar, cocoa powder, baking soda and salt. Beat until combined, scraping down sides of bowl occasionally. Beat in egg and vanilla until combined. Add in flour and beat until combined. Cover and chill dough for about 1 hour or until easy to handle.
- Preheat oven to 375 degrees. Line baking sheets with parchment paper or Silpats. Shape dough into 1" balls. Roll balls in sprinkles. Place balls 2" apart on each sheet. Press your thumb into the center of each ball.
- Bake for 7-8 minutes or until edges are firm. Remove from oven; immediately press a chocolate candy into the center of each cookie. Transfer to wire racks to cool.
