Egg Nog Cookies
makes about 36 cookies
Cookie:
1 cup butter, room temperature
1 cup sugar
1 egg
1 cup egg nog
3 1/4 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
Icing:
1 1/2 cups confectioners sugar
1/4 tsp nutmeg
3 tbsp egg nog
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or Silpats. In a medium bowl combine flour, baking powder, baking soda, nutmeg and salt; set aside. In a large bowl cream butter and sugar until smooth. Stir in egg and egg nog. Add flour mixture and beat until combined.
- Drop by rounded spoonfuls onto prepared cookie sheets. Bake 8-10 minutes or until edges are lightly browned. Let cool on wire racks.
- Make icing: Put confectioners sugar and nutmeg into a small bowl. Stir in egg nog 1 tbsp at a time until desired consistency. Spread onto cooled cookies and sprinkle tops with desired colored sugars or sprinkles.
